Recipe:  Quinoa and Black Bean Bowl with Avocado Salsa

 Servings: 4 People Prep Time: 15 minutes Cook Time: 20 minutes

Ingredients: - 1 cup quinoa - 1 tablespoon olive oil - 1/4 cup onion, minced - 1 clove garlic, minced - 30 ounces cooked black beans - 1/4 cup fresh cilantro, chopped - 1/4 teaspoon chili powder - Pinch cayenne pepper - 1/4 cup fresh lime juice - Salt - Optional toppings: avocado salsa, shredded cheese, sour cream, diced tomatoes, hot sauce

Cook quinoa according to package instructions.

Heat oil in a saucepan over medium heat. Add onion and garlic; sauté until softened.

Add black beans, chili powder, and cayenne pepper. Simmer for 10 minutes.

4. Fluff quinoa with a fork and stir in chopped cilantro and lime juice.

Assemble bowls with quinoa, black beans, and desired toppings.
