Grilled chicken and vegetable skewers (Protein and Fibre-rich) 

Healthy Recipe for Diabetes Patients

Ingredients:   – 500g boneless, skinless chicken breast or thighs, cut into 1-inch piece – 1 red bell pepper, cut into 1-inch piece – 1 yellow bell pepper, cut into 1-inch piece – 1 onion, cut into 1-inch piece – 2 cloves garlic, minced – 2 zucchinis, cut into 1-inch slice – 2 cherry tomatoes, halved – 2 tbsp olive oil – 1 tsp dried oregano – Salt and pepper to taste

1. Preheat grill to medium-high heat.

2. Thread chicken, bell peppers, onion, garlic, zucchinis, and cherry tomatoes onto skewers.

3. Brush with olive oil and season with salt, pepper, and oregano.

4. Grill for 10-12 minutes, turning occasionally, until chicken is cooked through and vegetables are tender.

5. Serve hot and enjoy!
