Lentil Soup with Spinach

Ingredients:
- 1 cup dried green or brown lentils, rinsed and drained - 4 cups vegetable broth - 1 onion, chopped - 2 cloves garlic, minced - 1 carrot, chopped - 1 celery stalk, chopped - 1 can diced tomatoes - 1 cup fresh spinach leaves - Salt and pepper, to taste - Olive oil, for serving (optional)

Saute onion, garlic, carrot, and celery in a pot until tender.

Add lentils, broth, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 30-40 minutes or until lentils are tender.

Stir in spinach and season with salt and pepper.
